Rolls or Sandwich Buns!
This recipe is easy to double or triple depending on how many you are feeding! One batch normally gives 12-14 buns depending what size you choose to make.
Ingredients:
1 cup milk
3 tbsp butter, sliced into pieces
¼ cup honey (I prefer raw honey)
1 egg
1 tsp salt
3 ½ cups hard wheat flour (I prefer hard white wheat for a lighter flavor)
3 tsp vital wheat gluten (optional, but helps with rise and texture)
1 tbsp yeast
Heat milk and butter in a saucepan or in the microwave until butter is just melted.
Combine milk mixture, honey, egg and salt in your mixer with 2 cups of flour until combined.
Mix in yeast. Mix in remaining flour a scoop at a time until dough starts to hold the shape of a ball. Knead 5-10 minutes until the dough passes the window pane test. When you stretch a small piece in front of a light source, you should see the light before it breaks apart.
Let rise until doubled in size, normally 45 min-1 hour.
Punch down dough and remove onto a floured surface. Use a pastry cutter or knife to cut off pieces a little larger than golf balls. Roll into a smooth ball and then shape into whatever type of roll, hotdog or hamburger bun you want. I normally get 12-14 buns per batch. Let rise another 30 minutes until it doubles in size again.
Preheat oven to 400 degrees during the final rise. Bake for 15 minutes until internal temperature is between 190-200 degrees. They should just be turning golden brown.
If desired, brush a little butter on top, especially if using as a dinner roll! Cool, slice and serve!
