Fluffy, Whole Grain Pancakes
It is easy to double or triple the recipe for a crowd.
We double it for my family of 5.
-1 ¼ cups freshly milled soft white flour
-1 tbsp baking powder
-1 tbsp honey or cane sugar
-1/2 tsp salt
-1 egg
-2 tbsp oil
-1/2-1 cup milk
-Choice of mix-ins: chocolate chips, blueberries, diced banana, etc
1) Preheat griddle.
2) Mix egg, oil, and honey or sugar. Whisk in dry ingredients. Add in milk a little at a time until you get your desired consistency. It should start a touch on the runny side since the flour will soak up some moisture while it sits. Fold in desired mix-ins.
3) Grease hot skillet with oil for cooking. Spoon batter onto skillet. Turn when the top stops looking shiny and the bubbles rise and pop in the batter.
4) For fluffiest pancakes, cook low and slow, turning only once. Do not smash down with your spatula. Patience is key here.
You can get as creative as you want with these by using different mix-ins and toppings. Our family’s favorite is chocolate chip pancakes topped with diced strawberries and fresh maple syrup! Yum!
